The grapes from the bees' vineyard, next to the Quinta de Castelo Melhor apiary, undergo a sorting/selection process upon arrival at the winery, being partially destemmed and crushed. This is followed by pre-fermentation maceration at low temperature in stainless steel vats, followed by alcoholic fermentation at 25ºC. During this process, the usual remontage and delestage procedures are carried out to extract and homogenize the phenolic components of the grapes. Vinification ends with post-fermentation maceration. The must remains in contact with the grapes for a maximum of 18 days. Aging in 300-liter French oak barrels for a period of approximately 18 months. 70% of the barrels used are new and 30% are second-year.

Tasting Notes:
Deep red colour. Delicate and complex aroma, dominated by ripe black fruits such as plum, blackberry, and currant. Its complexity, which tends to increase with time, comes from the aromas originating from its aging in barrels. Fresh and very enveloping on the palate, with firm but ripe tannins, well integrated into its body and volume. All these characteristics, combined with its retro-nasal aroma, result in a complex and elegant wine with a persistent finish.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 16°C to 18°C.
Food Pairing:
This wine pairs elegantly with red meats, roast beef, and grilled meats.
