The base wine was the result of spontaneous fermentation at a controlled temperature in stainless steel vats and approximately 10% in used wooden barrels, aging on fine lees for 7 months. S. Bayanus yeast was added during the fermentation. It aged on lees in the bottle for approximately 40 months.

Tasting Notes:
With a citrine colour and golden hues, it reveals a very fine and smooth bubble. Its complex aroma is reminiscent of dried fruits, spices, and sea air. On the palate, it is creamy, very fresh, and saline. A distinctly volcanic and oceanic sparkling wine.
Store and Serve Advices:
Serve between 8 and 10ºC.
Food Pairing:
Goes well with dishes containing fat, fish or meat, as well as aged cheeses.

Contains sulphites.
