Winemaking:
Harvested into 20 kg boxes, the grapes were gently crushed without destemming in a pneumatic press. Only the first fraction of the must was used, which was immediately pumped into stainless steel fermentation tanks, where the base wine fermented. The wine was then bottled and placed in a cool cellar for a second fermentation according to the classic method, after which it was aged in the bottle for "dégorgement à la glace."
