Winemaking:
Total pressing and destemming, as soon as possible after the grape harvest, and in a very light way to minimize the possibility of the wort being dyed by the phenolic components responsible for the colour of the reds. followed by cooling and decanting at 13ºC. The fermentation of the clean must took place in a small stainless steel tank at a controlled temperature of 16ºC, in order to preserve all aromas and freshness.
