The grapes are partially destemmed and crushed, 3 days of cold maceration: 12 days of alcoholic fermentation without temperature control; gentle treading twice a day; 1 month of “cuvaison”; malolactic fermentation in new French oak barrels.

Tasting Notes:
Concentrated ruby color. The aroma highlights plum and ripe cherry, accompanied by notes of dark chocolate, black pepper, nutmeg and a little cinnamon. Very powerful on the palate, with high tannins, velvety and full-bodied with a very persistent finish.
Store and Serve Advices:
Serve at a temperature between 16 and 18ºC. Bottles should be stored horizontally in a clean, airy place protected from light and with normal conditions of mild temperature and constant humidity.
Food Pairing:
It goes well with various red meat dishes, cold cuts and cured or semi-cured cheeses.
