Winemaking:
Once harvested, the grapes are transported to the winery in 20kg boxes. After undergoing careful manual selection, the bunches are lightly crushed before being sent to the wine press and the alcoholic fermentation process begins spontaneously after a few hours of foot treading. When about half of the sugar has fermented, the winemaker gives the signal to begin the fortification process. The wine is drained from the press into a storage tank and 77% alcohol wine spirit is added, stopping the fermentation activity and preserving the natural sugar of the grape. In spring, the wines are transferred from the cellar in the Douro to the aging warehouses in our cellars in Vila Nova de Gaia. Vintage wines age in old oak vats for a period of 2 years before being bottled.

Traditional grape varieties
