Product details
The wine underwent a fermentation and maceration process of the musts, without contact with the skins, using only natural yeasts at a temperature of 20°C in stainless steel vats. After 6 days, fortification was induced with brandy, and fermentation was stopped once the desired level of sweetness had been reached. It was aged in American oak casks according to the traditional 'Canteiro' process. This involves gently warming the wine in the attic of the warehouses in Funchal. Over the years the wine is transferred from the upper floors to the middle floors, and eventually to the ground floor, where it is cooler. After this 'gradual stoking' the filtered wine is clarified before the blend is assembled and bottled.
