Exclusively Boal grapes harvested from a hillside on the north side of the island, in the parish of São Jorge. Aging In 650-liter oak barrels, until bottling.

Tasting Notes:
With some age, the Boal offers a scent that I refer to as terroir; the dusty summer road. It is also present here and together with fudge, sugar cane, herbs and dates it is an elegant version of a Boal. Elegance is also the hallmark on the palate and the style is exactly what I expect to emerge from Borges. I like it a lot and its dusty vanilla and gum taste goes well with the honey and figs that come after a while. Fine acidity on a mineral driven finish.
Store and Serve Advices:
Store at a temperature of 18ºC. Serve at a temperature of 16ºC to 18ºC.
Food Pairing:
Delicious with desserts. It can be served with fruit, especially pineapple, fruit salad, rich cakes, strong cheeses or chocolate. It is also good with coffee as a digestive.
