Tasting Notes:
Medium ruby colour. Intense, clean nose. Sweet aromas of wild berries, such as blackberry and blackcurrant, ripe red fruit, of which sour cherry stands out, and a herbaceous side with notes of green peppers, typical of the Cabernet Sauvignon variety, further increasing its complexity. Ageing in barrels gave it notes of chocolate, coconut and sweet spices. The palate shows a remarkable balance between intensity and smoothness. It stands out for its high intensity of flavour and above-average body and alcohol, and a smoothness marked by a delicate, polished tannin and a sensation of freshness conferred by its excellent acidity. The warmer aromas of spices and chocolate linger as you taste. It finishes smooth, long and inviting for further tasting.
Store and Serve Advices:
As a full-bodied wine with lively acidity and lots of flavour, we recommend serving it between 16 and 17ºC.
Food Pairing:
A wine born for the table. Its duality on the palate, with soft tannins and strong flavours, makes this wine an excellent accompaniment to intense slow-cooked dishes. The typical Alentejo lamb stew, pork seasoned with chilli paste in a wood-fired oven or a Portuguese stew are excellent gastronomic suggestions. Notes of caramelised onion with crispy duck breast in the oven, pasta dishes with tomatoes, fresh basil and some dried fruit, such as toasted almonds, and cheese boards made with fresh figs and fruit are also in the range of pairings that go well with this Cabernet Sauvignon.
