Product details

Winemaking:
The grapes are transported in 18kg crates to the winery in order to preserve the integrity of the bunch. After a first selection, the grapes are destemmed and a second sorting is carried out, berry by berry, in order to eliminate dehydrated berries that could impart more overripe notes to the wine. The grapes were co-fermented in presses where fermentation took place with indigenous yeasts. Temperature control allowed the fermentation kinetics to be regulated so that a more intense and prolonged extraction was possible. Once the desired baumé had been reached, the wine press was fortified with the addition of grape brandy. After 48 hours, the liquid was separated from the masses and then riddled.
