Appellation:
Cask Matured is a gin made from the infusion of the most characteristic aromatic herbs from our estates in the Douro. Our gin is made using the vapour infusion process. The juniper and botanicals are placed in baskets inside an alembic and do not come into contact with the alcohol. Before the liquid is distilled, the alcohol vapour passes through them. This allows the botanicals to release their essential oils into the vapour. Then, when the vapour is condensed back into a liquid state, the essence of these botanicals is infused into the distillate. To achieve the desired intensity of each botanical, this distillation process can be done up to 5 times. After careful distillation to extract the purest flavours and aromas, the gin is aged for 12 months in oak casks previously used for Port wine, until it reaches its optimum point.

Tasting Notes:
Amber colour. On the first nose, notes of juniper and mint are more present. Then you get some sweet liquorice notes, lots of black pepper and orange peel also appear. Intense, aromatic and balanced.
Storage:
It should be stored upright, in a dry place with a constant temperature between 10-20º and avoiding direct light.

This dry gin will please anyone who wants to enjoy it neat or on the rocks.
