Winemaking:
It begins with pre-fermentation maceration at a temperature of 10-12ºC. Fermentation follows in stainless steel mills with robotic treading at a controlled temperature that does not exceed 30ºC, which provides a strong extraction of the constituents present in the skins. The aromatic intensity and its elegance are due to the dominance of the Touriga Franca, Touriga Nacional grape varieties and the presence of many other noble Douro grape varieties from very old vines over a hundred years old. Sousão contributes significantly to its structure, concentration and persistence. Tinto Cão contributes to its freshness and elegance. In order to optimize the quality and desired profile, a careful qualitative selection of the spirit was carried out, which stood out for its organoleptic elegance. This batch of aromas together with those from strong extraction create the intensity and elegance typical of an LBV. Maturation/Elevage in used 640 liter French Oak containers for 2 years. During this period the wine is subjected to racking, analysis and tasting to monitor its evolution and define the final batch.
