Step on the entire bunches in “Calcatórium” (granite basin) for 3 hours followed by pressing in a vertical press. The must flows by gravity into cement tanks in an underground cellar with natural optimum conditions of temperature and humidity. Spontaneous fermentation is carried out without temperature control. 1 year aging in cement tanks.
