The grapes from the permitted varieties were received at the Quinta dos Carvalhais winery in small crates. The musts, duly protected from oxidation through the use of inert gases, underwent static decanting at a low temperature for a 24-hour period so as to reach the level of limpidity required. They were subsequently sent to stainless steel tanks with temperature controls, where the selected yeasts were added, and fermented for about 20 days at temperatures not higher than 16ºC. Maturation took place in French oak wood, 225-litre, barrels, with different degrees of use, for a period of about 30 months, during which any intervention was avoided. Thereafter, wines from the different barrels were tasted one by one, with only the best selected for preparing the final blend.

Tasting Notes:
It has an appealing golden-yellow hue. Its aromas have a striking complexity, made even more elaborate by dried fruit notes, green pear, white fruits and some vanilla, as well as a component reminiscent of fresh vegetables that provides it with freshness. Its palate has a strong attack, with a lively and well-balanced acidity that gives this wine a great deal of vivacity. It is a very appealing wine, dense, aromatic and with a very long finish.
Store and Serve Advices:
The great white grape varieties of the Dão, as well as the long maturation in barrels, provide Quinta dos Carvalhais Colheita Seleccionada with a great potential for evolution in the bottle. The bottles of Quinta dos Carvalhais Colheita Seleccionada should be kept horizontally, in a cool and dry place. Once open, it should be enjoyed immediately, although it may be kept for 2 to 3 days in a refrigerator, provided it is well corked. Serve at a temperature between 10ºC-12ºC.

Excellent with rich fish dishes, smoked fish, pâtés as well as white meats or poultry.
