Over time, the wine gained in color, but in aroma, the exuberant young fruit very evident after its first winter, became more closed, although still very present on the palate with plums and blackberries. Firm grainy tannins on the palate showing great elegance. In the mouth it is semi-sweet, combining with a strong structure and a long finish.

Product details

Winemaking:
In our Port winemaking center, in Vale de Mendiz, the grapes were foot-trodden in their entirety, with 100% stems. After fortification with wine brandy, Porto stabilized during the winter. In spring, the wine was transferred to a very cool area of ​​the winery at Quinta de Nápoles and placed in barrels (traditional 550l barrels). The aging of this Port in barrels in a cool cellar in Douro, rather than in large barrels in Gaia, coupled with the fact that Bioma is bottled in the third year after harvest, creates an exceptionally complex wine. Interestingly, this was how it was done in the “old days”, when wine was sent in barrels to England, and was bottled later.

Store and Serve Advices:
Ports are wines that develop very well in the bottle and should therefore be stored in a dry and cool place where the bottles should be kept laid down and away from light. Serve at a temperature of 17 to 18ºC.

Food Pairing:
Perfect with Queijo da Serra, Stilton or other “blue” cheeses. Desserts with egg sweets, especially sponge cake.

Balsamic and vegetable notes in the aroma, a curious chemical notes to remember ink, iodine. Grows very, is a different Port, more elegant and fruity, medium structure.
