Product details

Winemaking:
The selection of the grapes is carried out directly in the vineyard, where only the highest quality bunches are hand-picked. After harvesting, the grapes are transported to the winery, where they undergo gentle pressing, extracting only the purest and most delicate must. The must is then subjected to static decantation, allowing the solid particles to settle naturally. After decantation, the clear must is transferred to stainless steel tanks where alcoholic fermentation takes place at a controlled temperature. This process is fundamental to preserving the freshness, elegance, and fruity aromas of the base wine. The second fermentation takes place in the bottle itself, following the classic method – champenoise. This process is carried out slowly and at a low temperature, allowing the preservation of the characteristics of the base wine. The result is a sparkling wine with a delicate aroma, very fine and persistent bubbles. After the second fermentation, the wine remains in contact with its lees for 5 years. This long aging contributes to the development of a creamy texture and a perfect balance between acidity and body, giving the sparkling wine exceptional complexity and depth.
