Product details

Winemaking:
Grapes were hand-harvested and transported to the winery in 25kg boxes. The boxes were separated from the best parcels and the best bunches were manually selected. Destemming followed, and the grapes were gravity-fed to a pneumatic press, where they were delicately pressed for 3 hours. The must was then transferred to a stainless steel tank at 10°C, where it was allowed to settle naturally for 48 hours. It was then filtered to separate the coarse lees. Alcoholic fermentation began spontaneously with native yeasts, with minimal intervention, only with the fine lees in stainless steel. 70% aged for 9 months in stainless steel tanks and the remainder in new French oak barrels, also for 9 months.
