The grapes are harvested by hand and quickly transported to the winery in small boxes. This is followed by destemming, skin maceration and fermentation in contact with the skins for a few days. Fermentation ends in 400-liter French oak barrels, where the wine also undergoes bâtonnage for 9 months on its lees. After this, the wine ages in stainless steel for 6 months on fine lees and, after bottling, it is then aged in the bottle for 12 months.

The aroma stands out for the presence of spices such as cinnamon and vanilla, complemented by citrus varietal notes and hints of dried fruits such as hazelnut and almond. In the mouth, it presents a lively acidity and well-defined flavours, with a voluminous texture and minerality, culminating in a long finish. The influence of wood gives structure and brings a balanced elegance to the palate.
Store and Serve Advices:
It is recommended to serve this wine between 11 and 13°C for best appreciation.
Food Pairing:
Curtimenta is ideal to accompany richer fish and seafood dishes. Examples include stuffed crab, breaded shrimp with honey and coconut, and Galician octopus with crispy potatoes.
