Appellation:
Challenge, inspiration and passion were the great motivators for Dário Pimpão in the production of a natural Ginja without dyes or additives, made with high-quality ingredients. The great secret of Oppidum lies in the fact that it uses only the best fruits to obtain a pure, aromatic liqueur with a balanced alcoholic gradation, which when tasted has a smooth and full-bodied flavour. It all starts with the selection of the fruit harvested from the sour cherry trees in the orchards of producers who have been suppliers of sour cherries for decades. Each peduncle is carefully removed and, once at the facilities, the fruit is infused with water and alcohol for a few months until it reaches the desired stage, in a long process that requires a lot of patience and knowledge, evolving over time.
