Winemaking:
The grapes are harvested by hand and transported to the winery in 20kg boxes. After undergoing careful manual selection, the bunches are destemmed and the grapes are lightly crushed before being sent to the fermentation tank. The alcoholic fermentation process begins spontaneously after a few hours of gentle pumping over. When about half of the sugar has fermented, the winemaker gives the signal to begin the fortification process. The wine is drained from the fermentation tank into a storage tank and 77% alcohol brandy is added, stopping the fermentation activity and preserving the natural sugar of the grape. In spring, the wines are transferred from the cellar in the Douro to the aging warehouses in our cellars in Vila Nova de Gaia. Our Colheita Ports age for a minimum of 7 years in old 550L barrels until their first release on the market.
