The grapes were fermented in traditional granite lagares, a process that favours the natural fermentation of the yeasts. This method helps preserve the authentic characteristics of the grapes and the terroir, giving the wine unique flavours and aromas. Ageing: After fermentation, the wine was aged for 52 years in 550-litre chestnut wood barrels. These barrels were 100% used, allowing for a slow and gradual maturation process that enhances the complexity of the wine without overloading it with new oak flavours. Prolonged ageing in chestnut wood has contributed to the development of deep, nuanced characteristics in the wine, giving it a distinctive, robust profile.

Tasting Notes:
Deep amber colour with rich, complex tones. It has inviting aromas of ripe plum and sultanas, followed by delicious notes of toffee and caramel. These rich, sweet aromas are elegantly layered, creating a complex and seductive bouquet. The flavour is a symphony of toffee, coffee and chocolate, complemented by nuances of tobacco and honey. Olive leaves and resin add unique, earthy touches, while a subtle spicy note emerges from the mid-palate to the finish. The wine is smooth and well-balanced, with a refined acidity that emphasises its depth and complexity.
Store and Serve Advices:
the bottle should be in the upright position, at a constant temperature and away from intense direct light. After opening, consume preferably in 18 to 20 weeks. Port wine is a natural wine, so it may form some natural sediment with time. Pour it carefully, so it does not become cloudy. Should be served at a temperature between 14º to 16º C.

Serve with almond tart, pumpkin pie or custard tarts.
