The overripe grapes are harvested manually. This is followed by partial destemming and crushing in a mechanical press, where intense maceration takes place before and during alcoholic fermentation (AF). The various pumping over stages during fermentation are aimed at temperature control and greater skin extraction. Wine spirit is added to the fermentation at the ideal time for each grape variety, thus preserving the wine's aromatic concentration, colour and structure. The Vintage is aged in oak vats in the Douro, with temperature and humidity control, and after successive tastings, it was bottled 3 years after its harvest. This wine has not undergone a stabilisation procedure, so a natural deposit may form in the bottle.

Tasting Notes:
Opaque wine with a deep purple colour. Aroma of sultanas, dark plums and heather. On the palate it has notes of liquorice, cocoa and chocolate.
Store and Serve Advices:
Serve slightly chilled between 12 and 13ºC , in an appropriate glass.
Food Pairing:
Suitable for rounding off large lunches or dinners. Goes very well with chocolate desserts or strong cheeses.
