Fermentation in stainless steel vats with skin maceration and pump over at temperatures between 16-18ºC, oriented to produce whites full of colour and structure, with sufficient phenolic compounds to withstand prolonged aging in wood. Fermentation is interrupted by the addition of wine spirit, giving rise to a fortified wine. High quality wine, obtained by blending wines from harvests of several years, in order to acquire a complementarity of organoleptic characteristics typical of this style of aged white. Aging in wood for varying periods of time, in which the age mentioned on the label corresponds to the approximate average of the ages of the different wines participating in the batch and expresses the character of the wine in terms of the characteristics conferred by aging in cask.

Tasting Notes:
Dark golden hue with greenish tinges that indicate that it is a very old wine. Elegant, but intense nose where notes of yellow fruit with stone stand out, such as apricots involved in spice, dried fruit notes such as hazelnut and vanilla, but always with a citrus note that characterizes Kopke white wines. In the mouth it is opulent with saline notes, but maintaining the elegance and freshness that characterizes the old white wines of Kopke so well. Intense and lasting finish.
Store and Serve Advices:
Serve at a temperature between 8 and 10ºC.
Food Pairing:
Excellent option to accompany desserts such as sliced fruit or almond tart. It also goes perfectly with dried fruits, hard and medium intensity cheeses or foie gras.
