The late harvest of selected grapes, affected by noble rot, took place in mid-October. The bunches were destemmed and gently crushed, followed by cold maceration for five days. After pressing, the must remained at a low temperature for a further 24 hours. Statically decanted, it was then transferred to used French oak barrels, where it fermented slowly throughout the winter, developing all its complexity and elegance.

The aroma is rich and complex, with exuberant notes of apricot jam and marmalade, enveloped in delicate nuances of dried fruit. Touches of honeycomb, tangerine peel, and a subtle vanilla background lend depth and elegance, in a seductive and harmonious bouquet. On the palate, this late harvest reveals an enveloping and well-balanced sweetness, with a vibrant acidity that provides freshness and harmony. Notes of candied fruits, such as apricot and marmalade, are accompanied by a touch of honey and mild spices. The finish is long and persistent, marked by a light touch of orange peel, leaving a velvety and complex sensation.

Serve at 7-9ºC.
Food Pairing:
Excellent for desserts with dried fruit and sliced fruit. It also pairs well with desserts such as crème brûlée or apple pie, or you could opt for the classic combination: foie gras or Roquefort cheese.
