The grapes, from old vineyards, were transported in food-grade plastic boxes and subjected to rigorous sorting at the winery entrance. After gentle crushing, without destemming, they were sent to a traditional wine press where they were trodden by men at regular intervals. The alcoholic fermentation was then interrupted by the addition of grape brandy. The wine was aged in 550-litre national oak barrels for 18 years. It was bottled without any filtration, which is likely to create a slight deposit in the bottle.

Tasting Notes:
Bright amber wine. Excellent aromatic intensity, with soft notes of dried fruits and a subtle touch of spices, harmonized with delicate notes of honey and candied orange peel. In the mouth, it surprises with its balance, concentration, volume and structure, composed of fine-textured tannins. A seductive and elegant wine, with a complex and very persistent finish.
Store and Serve Advices:
Ideal consumption temperature: 14-16ºC.
Food Pairing:
Slightly fresh, it expresses all its delicacy and sophistication when combined with desserts based on caramel, dried fruits and spices, such as caramel fondant with apple and ginger compote, tarte tatin, crème brûlée and medium-intensity cheeses. Despite its age, its freshness remains. An extraordinary pairing with a refreshing tangerine parfait.
