Product details

Winemaking:
Hand-harvested at night and transported in small 12kg cold boxes to the winery. The bunches pass through the sorting table to small 300kg vats where the 40% skin/wort ratio is concentrated by bleeding. Alcoholic fermentation takes place over 12 days without temperature control and with indigenous yeasts. Malolactic fermentation takes place over a cuvaison period of around 3 months, after pressing at 2 bar, all the wine is aged in third-use Tronçais oak barrels. 37 months in Tronçais barrels, which are only topped up once a year. It was bottled in Rama, without filtration or stabilisation and aged for 2 years in the bottle.
