It was a year with some rain, and an intense cold in March, which led to a reduced birth rate. With a warm spring, the grapes ripened earlier, which led to an early harvest. The harvest of white wines began on August 26th, ending with red wines on September 26th. It was a good year, with balanced acidity. Despite the alcohol level being higher than the previous year, we still managed to maintain the freshness and elegance that characterize Quinta de Baixo wines. The Caracolete White 2020 comes from an old hillside vineyard. It was vinified in stainless steel, where it fermented with skin maceration for a month. The malolactic process took place in stainless steel, where it aged for 2 years. It was bottled without filtration.

Tasting Notes:
The White Caracolete follows the line of its predecessor. The color shows a slight evolution as a result of skin maceration during fermentation. The nose is intentionally marked by herbaceous/vegetative notes on a base of citrus fruits. In the mouth it is structured, with excellent acidity and an almost spicy finish. This is intentionally a different wine for those looking to be surprised by a different interpretation of the traditional old hillside vineyards of Bairrada.
Store and Serve Advices:
Store lying down at a temperature of 15°C. Serving at a temperature from 10-11°C.
Food Pairing:
Seafood dishes, baked fish and cod dishes. It goes very well with Japanese-inspired dishes, with alkaline and iodized flavors (as well as Nori seaweed).
