Winemaking:
The grapes are selected by hand before entering the winery. They are destemmed and foot trodden in granite lagares. The wine is then transferred to new 225-litre French oak barrels from various cooperages, where malolactic fermentation takes place. The wine is then aged for 24 months in the same barrels and has been aged in the bottle since July 2016.

Store and Serve Advices:
Serve at a temperature between 16º and 18ºC. Store upright, in a cool place and under full light. Consume up to 10-20 years after bottling.

Food Pairing:
Ideal with elegant but lightly spiced dishes such as fillet mingon with red wine reduction or Rattaouile. It also harmonises perfectly with soft cheeses and grilled or roasted meats.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
