From the best plots of Quinta da Carregosa, the grapes were harvested manually in the plots that showed a more balanced maturation. After careful manual selection and harvesting, the grapes are subjected to crushing and total stemming. This is followed by a period of 48 hours of skin maceration at 10ºC to maximize the action of the grape enzymes responsible for extracting aromas. Selected yeasts are used to induce alcoholic fermentation, which takes place between 12ºC and 15ºC for a minimum of 30 days.

Tasting Notes:
Very closed red, with a bluish reflection. It reveals an aromatic intensity dominated by ripe blueberries, with balsamic notes so characteristic of the vineyards at the mouth of Távora. The well-integrated wood increases the complexity of the test. In the mouth it is very elegant, full of structure, with round tannins. The finish is long and persistent.
Store and Serve Advices:
Bottle lying down, room temperature with small temperature range (14ºC to 18ºC), humidity of 60% and protected from light. Serve at a temperature between 20ºC and 16ºC.

Grilled meats or in a light sauce, soft cheeses, salads.
