Fermentation with indigenous yeasts at a temperature between 24-28ºc for 3 to 4 days. Interruption of fermentation with wine spirit at 77º V / V. Aged for 2 years in stainless steel vats. 1 year minimum bottle period.

Quinta da Gaivosa Vintage Port is a wine distinguished by its quality, produced exclusively in years considered to be of exceptional vintage and quality. Special, with an elegant and distinctive character. From the Tinta Amarela, Sousão and Touriga Nacional grape varieties, among others, this Port has strong, structured tannins and nuances of chocolate. Compact but at the same time balanced and with a deep black colour.
Store and Serve Advices:
Should be opened two hours before serving and decanted. Serve between 17º and 18º C. Store the bottle on its side in a cool, dry and dark place.
Food Pairing:
Drink with cheeses such as Stilton or Gorgonzola. But you can also incorporate them into a meal, for example by pairing a Steak au Poivre with a young Vintage.
