Fresh grapes at their ideal ripening point, picked by hand into 20kg boxes. After de-stemming and gentle crushing, the grapes were placed in a stainless steel tank and macerated on the skin for five days. These fermented for five days, with three "delestages" per day, remaining in post-watering maceration for another three days. The result was a wine with excellent extract. This aged in old French oak vats. The Blend was made in March 1999.

Tasting Notes:
Wine with a golden red color. Delicate aromas of quince, plums and raisins. Some attractive nuances of resin and spices. In the mouth, it already shows its age in the bottle, with notes of licorice, dried plum and leather. Soft tannins with great elegance and delicacy.
Store and Serve Advices:
Laying down in a cool, dry place, away from light. Long evolution potential, subject to deposit formation. Serve decanted, between 13º and 16º.
Food Pairing:
Excellent with fatty cheeses and dark chocolate-based desserts.
