Winemaking:
Vinified like a Tawny, fermenting with the skins for 3 to 4 days, giving it greater intensity and aromatic complexity and body. Interruption of fermentation with wine brandy at 77º V/V earlier than in a classic White Port. Aged for an average of 7 years in cement vats (without the traditional aging in wood, to preserve the purity of the fruit); vat not full, allowing oxidative aging, developing a lot of complexity and character.
Grape Varieties:
Malvasia Fina,Viosinho,Gouveio
Tasting Notes:
Amber colour. Aromas of caramel and maple syrup, along with notes of apricot and orange peel. Velvety, very aromatic, it is definitely a new and welcome interpretation of a Porto White.
Store and Serve Advices:
Serve at 10º C.
Food Pairing:
Blue cheeses (Roquefort, Stilton), Fruit desserts (tarte tatin, orange tart).
