Easter is just around the corner, so this is the perfect time to think about the wines we're going to pair with the traditional chocolates of the season.
Suggesting wine and chocolate pairings is always a challenge, as we're talking about two much-loved products full of personality, but when we live in a country where Port wine is born, everything becomes easier!
The general rule for good harmonisation is that the sweetness of the drink should be equal or greater than the dessert. With this in mind, here are some suggestions:
- Milk Chocolate: we suggest choosing between Ruby and basic Tawny, and maybe going for a 10 Year Old Tawny when the chocolate is more intense;
- Dark chocolate, like wine, is rich in tannins, which interfere with tasting and make the flavour more bitter, with a fruity or spicy aftertaste. In the world of Port wines, we could try a Ruby Reserve with 50% cocoa and upgrade to a Late Bottled Vintage with 75% chocolate;
- For fans of white chocolate, here's a tip: try a Rosé Port.
