Winemaking:
The wine was produced from grapes that were harvested and selected by hand and immediately sent to the winery where they were gently pressed in order to preserve all the varietal flavours. Alcoholic fermentation took place in stainless steel vats at a controlled temperature of between 12ºC and 14ºC to preserve all the elegance and aromatic characteristics. The second fermentation took place in the bottle using the traditional method for 20 months, with subsequent manual pumping over.

Tasting Notes:
Clear and bright in appearance, it has a straw yellow colour and a beautiful greenish hue. The nose has a combination of secondary and tertiary aromas, from floral to dried fruit. On the palate, the wine is vibrant with fine, voluminous bubbles and a refreshing, balanced acidity. Long and persistent aromatic finish.
Store and Serve Advices:
It should be served at 8ºC to avoid destroying the flavour of the grape.
Food Pairing:
Especially recommend to accompany starters, caviar, and fatty fish.
