It is at Herdade do Vale da Bica, right on Monte da Bica, that Bica Gin is produced using the water that springs from the Bica Fountain. It was there that Bica Gin was born after more than two years of intense experimentation. It's also where the botanicals that maintain the Alentejo heart of this gin are harvested. The orange and lemon peels, harvested at the Herdade and which punctuate the citrus notes of Bica Gin, the Honey and Corn Beards, bought from small producers in the neighbourhood and responsible for the rounder touch, and the Rosemary, which grows wild on the Monte and is responsible for the herbal touch. As the creators are keen to emphasise, the palette of botanicals has its heart in the Alentejo but its eyes on the world. They include coriander seeds, cinnamon, lime, chamomile, orange blossom, thistle, lily root and, of course, juniper, which has travelled all the way from Macedonia.
Tasting Notes:
The nose is soft with herbal touches, where rosemary is immediately recognisable. In the mouth, spicy touches punctuate the warmth of the spices and the more herbal nature of this gin. The aftertaste is extremely long and builds to a finish where the juniper and sweet orange flavours coexist in harmony.
Storage:
It should be stored upright, in a dry place with a constant temperature between 10-20º and avoiding direct light.
Perfect Serve:
It can be served with lemon zest, or with fresh rosemary and juniper berries.
