After hand-harvesting the overripe grapes, they are partially destemmed and crushed in the wine press, where they undergo light maceration before alcoholic fermentation (AF). This occurs slowly and at a controlled temperature. Brandy is added to the fermentation when the desired sugar content is reached, resulting in a fortified wine that ages in oak vats for 3 to 5 years. The final blend is obtained by blending several wines with varying aging periods, averaging 4 years. These wines are stabilized and filtered before bottling in Gaia.

Tasting Notes:
wine with an intense, bright hue, with purple reflections and ruby rims. It presents a captivating aroma of plums, blackcurrants, and hints of liquorice. On the palate, notes of ripe fruit and black fruit compote stand out.
Store and Serve Advices:
It is recommended to store in a cool place, at a constant temperature (Ideal storage temperature 12ºC), away from light, and in a horizontal position.
Food Pairing:
Ready to enjoy as soon as the bottle is opened. Pairs excellently with dark chocolate mousse, puddings, fruit pies, or cream cheese. The perfect match: Red berry cheesecake.
