After the reception of the grapes and their qualitative control, they are disengaged and crushed. Then the crushed grapes are placed in the fermentation vats, remaining under maceration for a day at low temperature, thus extracting much of the aromas present in the films of the grapes. In the ideal moment the fermentation is interrupted with the addition of wine spirit resulting in a naturally sweet wine. The wines then pass through a period of aging and after the first passages are cleaned in winter, are placed in oak vats for a minimum of 1 year, the rest of the aging in stainless steel. Later the winemaking team chooses the wines that will constitute the final lot in order to maintain the characteristic style of the White Monge.

Tasting Notes:
It presents a bright and attractive yellow colour with great aromatic intensity highlighting the floral aromas, some tropical fruit and nuts. In the mouth stands out for the harmony, with a sweetness well balanced by the freshness of the acidity.
Store and Serve Advices:
Serve chilled, between 6° and 10°C. Store the bottle upright, in a cool, dry and dark place.
Food Pairing:
Served as an aperitif or as an accompaniment to soft goat cheese and melon soup.
