Fermentation with indigenous yeasts at a temperature between 24-28ºc for 3 to 4 days. Interruption of fermentation with wine spirit at 77º V / V. Aged for 2 years in stainless steel vats. 1 year minimum bottle period.

Sousão,Touriga Nacional,Touriga Franca
Tasting Notes:
It shows great aromatic finesse, with beautiful, ripe fruit that is restrained and fresh, with a slight floral touch. Excellent tannin polish, well-balanced sweetness and acidity, wild fruit runs throughout the tasting, here and there punctuated by spicy notes. It stands out for its great elegance and creaminess, without detracting from the fact that it will age gracefully with cellar time.
Store and Serve Advices:
Should be opened two hours before serving and decanted. Serve between 17º and 18º C. Store the bottle on its side in a cool, dry and dark place.
Food Pairing:
Drink with cheeses such as Stilton or Gorgonzola. But you can also incorporate them into a meal, for example by pairing a Steak au Poivre with a young Vintage.
