Product details
Manual wooden presses, with low yield, are essential for obtaining the best quality, as the skins and seeds are treated gently. Only the best and freshest Alicante Bouschet pomace (the foot-trodden skins and stalks, also known as “cake”) is chosen for distillation. The water vapor resulting from the water that is boiled by the action of the wood-fired boiler is forced to pass through the “cake” inside the copper columns, absorbing the alcohol in its path before being condensed and collected in the barrel. The “heads” and “tails” are carefully separated to achieve the greatest purity of the Alicante Bouschet spirit drink, always seeking to preserve the delicately perfumed aromas while avoiding unwanted aromas. Aging, for a minimum of 72 months, in old wooden barrels, with sweet notes, of 550L, will allow us to obtain a spirit with a soft colour, a velvety body, smooth and intense flavour.
