Winemaking:
Hand-picked grapes, whole bunch pressing without destemming in order to preserve all the aromatic potential. Fermentation in stainless steel vats for around 20 days. Ageing in stainless steel vats.

A classy, grassy Sauvignon Blanc

This wine is elegant. It is dominated by grass on the nose and palate in my opinion as opposed to the tropical fruit flavours you find in New Zealand Sauvignon Blanc for example. There is a hint of saltiness too. It would be great sipped by the sea whilst eating seafood.
