It is since 2010 in the small village of São João da Pesqueira in the District of Viseu that Manuel Correia prepares his nectars. In the cellar where the wines are produced everything is thought to the detail and with the utmost care. Wine is born in a humble, familiar environment where excellence results from work, delivery and knowledge.
The process of vinification is done by the introduction of staves (lightly toasted wooden parallelepipeds) inside the vats together with the wine. The result is vanilla, Indian cloves, spices, caramel, smoke and toast. Wine gains much more volume, complexity, elegance and balance. This technique of enrichment respects the fruit of the wines and the result is extraordinary. To all the flavors resulting from the wood, also the perfume of the blueberries, blackberries, strawberries, raspberries, plum, chocolate, esteva and violet are joined. The wines shows an intoxicating acidity and wild tannins that needs the bottle to dome them. After the bottling stage you will certainly see the walnuts, hazelnuts, truffles, leather, sous-bois and cedar ... At that time, the wines will be completely sweeping.
